Mould transport system:

Portions of tvarog, placed in automatically provided moulds, are then transported under pressing stands. Tvarogs are pressed for about 0,5 minute.

(For manufacturing rapidly ripening cheeses, the time of pressing is extended.)

After the pressing phase is finished moulds are turned upside down and moved to the emptying unit.

Portions of tvarog may then be (2 options):

  • fed onto a belt conveyor, from where they are collected manually and fed onto a packing machine.
  • fed into small trays. The trays are placed on carts and transported to the refrigerator where tvarog is cooled. After about 1.5 hours the carts are brought out of the refrigeration plant to the packing unit.
(In the manufacture of rapidly ripening cheeses the tray set becomes a container for salting cheeses.)

Tvarog moulds are directed after emptying to the tunnel cleaning station.

The washing unit is built in the form of a three-section tunnel:

  • initial washing section
  • actual washing section
  • final rinsing section.

The mould washing unit is equipped with a system for adjusting and monitoring the washing solution's temperature as well as its concentration.

The moment the line's operation is finished moulds return to the initial position – to the mould storage.
